Clafoutis

Ingredients:

4 eggs

20cl milk

25cl liquid cream

50g brown sugar

100g flour

1 pinch of salt

2 tbsp amber rum

250g apricots

250g strawberries

*can be varied with 500g of fruit of your choice

Preparation:

  1. Preheat oven to 180°C/gas mark 4.
  2. Mix together the eggs, brown sugar, flour, milk, cream, rum and salt.
  3. Butter a springform pan. Arrange the apricot halves, cut side down against the pan, and intersperse with strawberry halves between the apricots.
  4. Gently pour the clafoutis batter over the fruit, which should be completely covered. After a few moments, the fruit will rise to the surface on its own.
  5. Bake for 40 minutes. Let cool completely then chill before serving.

* Other variations are possible with the fruits of your choice.
