Ingredients:

4 eggs
20cl milk
25cl liquid cream
50g brown sugar
100g flour
1 pinch of salt
2 tbsp amber rum
250g apricots
250g strawberries
*can be varied with 500g of fruit of your choice
Preparation:
- Preheat oven to 180°C/gas mark 4.
- Mix together the eggs, brown sugar, flour, milk, cream, rum and salt.
- Butter a springform pan. Arrange the apricot halves, cut side down against the pan, and intersperse with strawberry halves between the apricots.
- Gently pour the clafoutis batter over the fruit, which should be completely covered. After a few moments, the fruit will rise to the surface on its own.
- Bake for 40 minutes. Let cool completely then chill before serving.
